Job Title: Head of Bakery Operations – Brisbane
Location: Darra, Brisbane, Queensland
Salary: $150,000 + superannuation
About the Role
Our clients are growing our Brisbane bakery and seeking a hands-on, strategic leader to drive daily bakery performance, mentor teams, and uphold the highest standards of quality, safety, and efficiency.
Role Overview
Lead and mentor the bakery floor (baking and pastry teams) to ensure exceptional product quality, appropriate staffing, ongoing training, and continuous improvement. Foster accountability, excellence, and strong financial performance across Brisbane bakery operations.
Key Responsibilities
• Lead bakery production teams to meet KPI targets (Quality, Labour, Wastage) seven days a week; manage rosters; direct supervisors (Mixing, Shaping, Baking, Pastry, Packing, Cleaning, Maintenance); recruitment, onboarding, and training; build a collaborative, quality-focused culture.
• Implement efficient manufacturing practices; trial and adopt new equipment; maintain strong supplier/vendor relationships; provide technical support as needed.
• Product & Quality Leadership: stay hands-on on the floor; support product development with GM/Commercial team; troubleshoot quality issues; conduct weekly quality reviews.
• Compliance & Quality Assurance: ensure HACCP, GMP, BRC, FSANZ/WQA compliance; maintain clean, safe, pest-free production; lead QA assessments; drive maintenance initiatives to minimise downtime; prepare for audits with zero major non-conformances.
• Strategic & Expert Input: provide training to senior staff, sales teams, and VIP clients; contribute to site design, equipment selection, and new site planning.

What We’re Looking For
• Proven bakery operations leadership, ideally in multi-site environments
• Hands-on, mentoring leadership style; strong team development
• Experience with rosters, labour costs, and seven-day production planning
• Solid knowledge of HACCP, GMP, BRC, FSANZ (and related standards)
• Track record in continuous improvement, equipment optimization, and cost control
• Excellent communication and cross-functional collaboration
• Problem-solving mindset with a customer-focused approach to quality
