This role oversees Atmos at Shoal Bay Country Club, an authentic waterfront Greek restaurant overlooking Shoal Bay, a major new Asian dining concept launching in 2026, and Nonna Bizzarro at The Exchange Hotel Newcastle, a vibrant Italian restaurant known for its energy, atmosphere, and strong local following. The Role Reporting to the Group General Manager, you’ll lead restaurant operations across the portfolio, driving performance, standards, leadership capability, and commercial outcomes.
